St. Paulin was built between 1734 and 1754 to plans by Balthasar Neumann. It features a stuccoed high-altar apse, ceiling paintings by Christoph Thomas Scheffler, and the shrine of the city's patron saint Paulinus. A little off the beaten path, so without tourist crowds, and very much an insider tip.
